I harvest one or two leaves at a time to avoid stressing the plant, allowing it to regrow before taking more.
Leaves are a great spinach substitute. They taste similar but also have a nice nutty flavor.
Young leaves are good in salads, while older ones work well in stir-fries, stews, or sauces.
