Sounds like “restaurant wars” on Top Chef, where two teams of four or five each have to run restaurant with a preparation time of 24 hours or so. (There is wait staff, though.) What goes wrong most of the time are the processes, unsurprisingly — orders not getting through, dishes not being delivered timely while others are piling up, cooks cooking the wrong dishes or components, all that.
