Apple has sunk $BIGNUM USD into chip design and fabrication; auto-bricking makes the phone useless to a reseller in the grey phone market, but the chips in the phone have value in other markets. So no ultimate deterrent in a mature ecosystem.
I have the expectation that Apple would prefer to shoot thieves rather than to equip their hardware with self-destruct devices. ("strap this bomb to your head" is a tough sell.)
