since ecash users are basically just anonymously using the mints lightning node to pay invoices, the payee will just receive a normal lightning payment from the mint, for the invoice they issued.
Usually sender privacy in lightning is pretty decent, so it's hard for the payee to know where the payment came from in a lightning context, and it's hard for the mint to know where the payment came from in the ecash context.
