Peeling, poaching, ice-bathing, low temp fry, freezing, then high temp fry. Timing is absolutely critical.
The switch to Bintje instead of Agria worked out fine, although the loss is much higher. 1200g of unpeeled potatoes only yield 400g of finished fries.
