Water would react with the lithium to form hydrogen, which is both flammable and explosive.
Graphite has an extraordinarily high sublimation temperature, so it would block the lithium from air, but its then flammable itself. More managable than lithium, I don't doubt, and amenable to more conventional firefighting methods, but its hardly a solution to anything in itself...
