This time I'm aiming for "Westmalle inspired with Chimay yeast, homegrown hops and dark rock candy sugar instead of that ridiculously expensive candi syrup". So 7%ish, dark, dry, with a combination of lovely dark fruit and caramel, some floral hoppyness, a touch of roast, spicy yeast notes and some rock candy sugar flavors.
Doesn't sound too difficult, right? 😅
