Dreamcast died and hurt the company because they had almost nothing to show for it (despite having a quite large repository of exclusives at the time), Sonic Adventure was pretty much the ONLY massive success of the console, not the cause of its downfall. Proprietary discs were a bit of a problem, along with jumping ahead of the next generation by a full year or two and being slightly weaker in aspects because of it (while being sold at too large a loss to be profitable unless they outsold the PS1).
The Saturn not having a Sonic was killer, but what also killed it was the system being a cluster fuck with poor marketing, overly complex technologies, no proper 3D support as 3D games were becoming popular, and being far too expensive. Third parties were all interested in exploring new avenues of game making using 3D, so most didn't consider the Saturn a system. Sega tried too hard to be unique, and shot themselves in the foot by not aiming for any market out there. Sonic not being there was damning, but the killer was the system itself in all regards. Not one part of it was actually thought out properly. It was also made during the time when Sega of America and Sega of Japan were basically at war with each other, which wasn't helping anything.
Anyone who would've even considered getting a Saturn heard the news that there was a system 3D capable, $100 less, CD playback, and launching with a solid lineup with more to come over at some weird company's booth as they showed up to a quite unusual party for their normal products, Sony's Playstation. The PS2 similarly left the Dreamcast fucked over, as people who had already built up so much on the first system decided to wait for this hot off the presses new magic machine rather than consider switching over.
