In theory updating would be pulling a new image so it should be easy even if it's been left a while.
I've not tried running one off a USB drive.
I Also wonder if an NVM-e or SSD in a caddy would be a bit more reliable than a USB memory stick as the usb drives aren't really known for endurance.
