I have to admit to not having really looked into the regional styles as much as Geoff - I just find something I like the look of and give it a go. The only preference I seem to have is bread over rice. I am not a massive fan of BIR stuff.

I am still trying to make Nihari like a place round here used to do (as the staff curry) before it closed. That was absolutely gorgeous and nothing I've ever done has ever come close.
