1. Delta chat can have that redundancy just fine, the hard part is managing the UX overhead of teaching users about multiple servers and reasoning about the user relationships with them, as well as consistency, and if this redundancy is worth this headache.
2. Can be achieved better with domain names or Pkarr, Nostr only works when everyone is reading from the same "popular" relays.
If you go with domains or Pkarr you don't lose redundancy, you can still have it, the question is if it is worth having, nothing in Pkarr prevents you from pointing to two servers, it just won't be fun, so you won't do it.
