I would agree philosophically, but in countries that take tips, employers are usually allowed to pay their staff lower than minimum wage, thus allowing the workers to not declare that tip income, getting them closer to a livable income they would not have with just minimum wage rates -- so would require Denmark like restaurant wages, thus Denmark like restaurant prices, to be sustainable, without tips.
