It looks delicious ❤️ Because of the long resting times I'm sure you don't need a starter. But I'm a fan of long waiting starters. Feeding the dough over days is very satisfying and the breads you get are worth the work. Pumpernickel is one of my absolute favorites, you get all the fiber you need in two slices.
