Rabbit and Chicken Stew Recipe:
Ingredients:
1 whole chicken, cut into pieces
2 rabbit legs, deboned and cut into bite-sized pieces
1 large onion, chopped
2 garlic cloves, minced
2 carrots, chopped
2 celery stalks, chopped
2 cups chicken broth
1 cup red wine
1 tablespoon tomato paste
1 bay leaf
1 teaspoon dried thyme
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat a large pot or Dutch oven over medium-high heat. Add olive oil and wait until it's heated.
Season rabbit and chicken pieces with salt and pepper.
Place rabbit and chicken pieces into the pot and cook until they are browned on both sides. Remove from the pot and set aside.
Add chopped onion, garlic, carrots, and celery to the pot and cook until they are softened and lightly browned.
Add tomato paste, bay leaf, and thyme to the pot and cook for a minute or two.
Pour in the chicken broth and red wine, and stir to combine.
Add the browned rabbit and chicken back into the pot, and bring to a boil.
Reduce heat to low, cover the pot, and simmer for 1 to 1 1/2 hours or until the rabbit and chicken are tender.
Serve hot with your choice of sides, such as mashed potatoes or crusty bread.
