idk what the official term for it is, but yknow how cold stone creamery has those cold stone tables? or how confectionaries have refrigerated tables for cooling candy? essentially you flatten a scoop of ice cream on it with a scraper or chisel, let it cool, then scrape it and it rolls up like a crepe or a rolled taco depending on thickness. from the top it looks like a rose kinda.
