yes, certainly on the last point, online resources are not reliable anymore. I am about to go start buying eBay versions of brewing books/etc. because I don't trust what I am finding online. There's a significant amount of variation even among the yeasts used for beer/wine/etc. (temperatures they live to, what kind of flavors they impart, etc.) -- so much so recipes call for specific brands/types of yeast. And, like your mother's sourdough starter, each source is different.
