Sure, but they might also not do that.
The thing is that clients will try to read your notes from your declared relays, and if a note is not there they won't know that note doesn't exist and won't go searching for it in other relays.
Of course your note may still be in other relays and people may end up finding it, specially if they really want to find what you have deleted, but this is not too different from what could happen on Twitter, that had a bunch of websites and services that kept archives of deleted notes from important people (and most normal users wouldn't see these notes regardless, so the deletion "worked").
