Cold salad stuff or packet noodles with pickles/kraut is great for this. Then when you get sick of it, stock up on the next fad meal. If you really can't remember to eat, set an alarm on your phone. No matter how stressed I am, my phone is always nearby - in fact moreso when I'm stressed - so it's a good reminder that it is a mealtime and one ought to eat something.
