OK, thank you for the many responses here

I have this morning experimented with the default Jitsi Meet meet.jit.si and it is MUCH better than Jitsi running in ionos Nextcloud, and it streams to Youtube perfectly

The only issue on Mac: need to use Safari and not Firefox to get screen share to work well

Next: test different browsers on PC and Linux, so as to be able to advise webinar guests what to use, and then I have a useable setup (I think)
