Big majors will do their best to be nurse ants, if not little nurse ants are around... so I assume little ants will collect leaves... so that could form the basis for the behavior change. The little nurse ants grow bolder in their old age (as all ants do) and more inclined to take risks and they try to help gather leaves... but end up riding... then snapping at flies is just natural to ants, flies are food... but even a little defense would make a big difference...
