There are infinite things we don't understand that we can't even begin to have a nuanced discussion in the classroom where there's so much already stuffed into the curriculum. Sort of a catch-22 where you need to learn stuff fast to approach problems but you also need space to ruminate on problems.
I'm afraid the issue is more complex than just our rigid institutions. There's a deep interplay between our educational institution, economic forces and culture that has been co-evolving for decades that have pushed in the direction of "fast results now, nuance later or probably never". Especially higher education, the culture has shifted towards business-ification. Less of the pie goes to enriching the student experience and endowing researchers and profs with adequate tools, and more to administration and marketing and financializing.
So we essentially have two opposing forces: ruthless competition to survive in an economically-driven world where results are the only thing that matters vs having the tools, the time, the culture and space to think very deeply about problems and mysteries to make real progress.
