There are two big flavors I was mostly unaware of before visiting Thailand:
Tamarind
Pandan
Stuff flavored with Pandan is delicious (similar to vanilla). It's a leaf the Thai use both for the green color as well as its flavor, and if the pandan/milk flavored taffy I found online is equivalent to the stuff I bought in Chiang Mai, I'm going to be very happy.
Whole dried tamarind flavored with sugar and chili is awesome, too. Will also be using tamarind in cooking later.
