I replaced water with whole milk in my bread today, to experiment.
I didn't anticipate that whole milk is only about 86% water: there is also 5% sugar, 4% fat and 4% proteins. I noticed right away while kneading that the dough was much dryer than usually.
Oh, well. I don't know yet how it will taste, but it's already a useful experiment!
My next experiment, on my next loaf, will be to use as much milk as needed to make the bread as hydrated as my usual recipe, to compare.
