First, Proton Docs doesn't offer a spreadsheet application (yet). It also lacks all the other applications that CryptPad offers (which are great!). Proton Docs only has a Doc document type so far.

Second, Proton Docs requires you to create an account with Proton and have an email. With CryptPad, you don't need to do this and if you create an account it doesn't require any personal information. Your username can even be the same one as someone's else.

Third, you cannot send collaborative links with Proton without requiring the other to have a Proton account as well if they want to interact with the document. This can be problematic for some collaborative work.

So in general I would say, if you already have a Proton Mail account and just want to store personal notes in there, then Proton Docs might be fine. But if you need more type of applications and files, be able to collaborate with third-parties without them having to create an account, and use an office suite that isn't linked to your other data, then use CryptPad.
