afaik El Salvador only came back on its mandatory acceptance of bitcoin as currency, but did not actually do anything to prevent businesses from accepting bitcoin.
My understanding is that the hotel in the screenshot autonomously decided not to accept bitcoin.
Would you want the hotel you are staying at, to be instead forced to accept a money that they don't want to accept?
Just choose another hotel, free market will do its job.
