There is no doubt that the #KirstenShockey books (eg #FieryFerments and #FermentedVegetables) are very American, and it is sad that they can't think globally. Some things that are more obscure here do not have listed substitutes.
And the use of "peppers" for chillies. Peppers? Is it capsicums?? or the Banana Capsicums either warm-hot or not?? or the chillies of varying degree? I always have to look at the context to determine which it is.
Full of good recipes, but a bit myopic.
