Russia's goal in wiping out Ukraine isn't necessarily to kill Ukrainian people, right? They want to wipe out any sense of Ukrainian-specific identity/culture/language, but it's not about blood.
They want Ukraine's land because ethnic Russians live there and they see Kiev is the ancient homeland of the Russian people.
They're not going to invade Mongolia even if it would be easier, because they don't see Mongolia as part of their grand ethnic mythology.
