Is there such a thing as #bread mania?

This morning:
- mix final poolish dough for baking today
- make quarter-sized trial levain for starter based bread tomorrow - refinement attempt #1
- feed starter for the next round

While I like working by hand with the bread dough, the initial mix is just outright messy. I have found no way to do this without having to squeegee 25% of my dough off of the mixing hand.

So I love my Danish whisks. They can do the whole mix, fold, pinch cleanly.
