You could use Ethernet - only to connect the machines on an isolated network. There are plenty of other data transfer interfaces you could use that are plenty fast enough for most uses.
I've deployed a LOT of isolated systems - yeah it means you need to go there to do stuff but it is far more secure.
Heck we had two independent networks at the office we had in Houston. One that went to NASA, the other to our corporate systems.
