The only thing I can think of is them installing some logger or tracker software of change the configuration of the server so that in next rounds of vpn connection your info is captured. Right? If that's the only thing that can potentially happen, then using some declarative distribution like Nix or Guix and checking the derivatives' hashes would be a good enough method for tampering detection?
