There are tools that will tell you if it was written by AI. Don't have the details, since I don't assign essays, but basically you plop in part of the text and it tells you if it was generated by the software or not.
Most post-secondary institutions require that essays be submitted electronically through a site that auto-detects plagiarism. Can't remember the name of it, but my kid had to do that almost ten years ago.
Also having kids write things longhand in class.
