I used to love Asian basa (a type of catfish, sometimes called Swai). As flaky white freshwater fishes go, its texture rivals that of saltwater fish. In the U.S., it's available flash-frozen everywhere.
But here in New Zealand, none of the brands that get imported here seem to have any clue how to properly flash-freeze it so that it keeps the awesome texture. No matter how I cook it, it shrinks to a third of its size by losing all its water, and comes out like jelly. :(
