Sometimes people complain about Cantonese food that’s been filtered through American lenses and flavors, but I complain about other regional Chinese food that’s been filtered through the Cantonese palate. I think when I first saw ‘Singapore noodles’ and ‘Fukien fried rice’ it made the Singaporean and Fukien parts of me really angry
(I’m less angry now but am quite amused)
