We're a bit ill, so dinner may end up being for tomorrow, but I've been cooking osso buco all arvo:
Brown a few, chuck them in an oven-proof pot/pan with a lid. Add roughly chopped carrot, celery, onion. Garlic peeled by smashing it with the flat of a knife. Some basil, stems and all.
Pour in 2x 700g jars of passata, or 3x 400g cans of chopped tomatoes, 1L of water. Bake mostly covered at 175°C for a few hours. Cool. Pull meat & marrow from bone. That becomes the base for pasta sauce #Cooking
