If you’re looking for a way to store extra eggs dehydrating is super easy.
I put 42 eggs in my blender, scramble them and pour onto 6 silicon trays for my dehydrator. Run at 140° for 16 or so hours then put ‘em back in the blender and powder them. I store with an o2 absorber and vacuum seal.
42 just about maxes out my dehydrator and fits just about perfect in a quart jar.
(After making a few batches I’ve found leaving trays in the dehydrator and pulling them out enough to pour in eggs from the blender is easiest so you don’t have to try to move the full trays from the counter back to the dehydrator)
