Update on the cheesecakes: You cannot, in fact, do surgery on a cheesecake. It does not go well. So I scrapped that one and it'll just be snacks.

Then my culinary torch fucked up, so I couldn't properly brulee the slices. Broil-bruleed but left it in like 5 seconds too long and it got a few burn spots but otherwise worked OK, just meant I was working the whole cake instead of slices. A bit more annoying to slice.
