I think that one of the major problems with food today and agriculture in general is that we expect complete uniformity at all times on a mass scale. This is an artificial reality that needs to stop. One should not be able to travel anywhere in the world and get the same hamburger. Things need to be regionalized & de-globalized. I don’t want these fucking oranges from South America or Spain. Give me citrus from a local greenhouse that isn’t picture perfect. Stop the waste.
