I think the cloud account is only used in an OAuth way to establish if you have the Lifetime Pass and therefore access to some features. It's worth asking in their support forums if there's a way to authenticate locally-only.
Infuse will look into Plex/Emby-managed libraries and update watched status and the like. It also handles some HDR stuff that the Plex player doesn't seem to handle on tvOS.
