Totally understand the concern. We don't want to have access to your data, so we built Maple using Secure Enclaves. The code is open source so people can audit, and reproducible builds validate the code running in the enclave is the same as the open source. The final step in the process is the "Verified" badge in the UI of Maple. If there is a mismatch between the code the client expects and what is on the server, the client refuses to connect. This protects the user. Our users don't have to trust us, they can verify cryptographically.
