My thought would be that for anything in the replicator, at some point, someone made that meal and it was converted to a pattern (with transporter technology, maybe?), and every time someone orders that meal, it tastes exactly like the original, with whatever modifications were requested.
If it was made well, it's good, but even if it's good, eating the same meal over and over again is repetitive, and they get tired of it.
I also suspect that the crew are so used to all meals being the same that they think it's weird when they aren't, and that's half of Voyager's trouble with Neelix, who not only is cooking food that's different every time, but is giving them the equivalent of an exotic indian dish they've never heard of when they are used to getting the same McDonald hamburger over and over...
