I'm eagerly awaiting @mwl's book on how to run your own mail server, but I solved today's mail problem without it: I got a cron mail from my travel laptop saying that it has installed security updates. It's great that it's updated, but the thing is turned off in my cupboard. How is it sending mail?
Turned my desktop system was misconfigured to use the laptop's mail name. D'oh!
