Having worked as a chef professionally, I don't have strong opinions on stainless steel frying pans.
They seem to work pretty well!
I don't think decent ones are terribly expensive at restaurant supply stores?
As far as brands you might find in your consumer oriented places, I am completely clueless though.
There is definitely a lot of expensive cook wear out there, though at least personally the only expensive stuff that really seems fascinating are all the ceramic stuff (which I guess has similar properties to nonstick, minus the horrible downsides to teflon/PFAs) but I am not a moneybags so I have never tried such things and cannot comment on them personally.
Other than avoiding teflon/PFAs, I think there are probably good reasons to also avoid aluminum cookware from what research I have seen?
If you are already a cast iron guy, you've always got a solid fall back.
