Apple Honey Muffins 🍎🍯

Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg (optional)
½ cup unsalted butter, melted
¾ cup honey
2 large eggs
1 teaspoon vanilla extract
1 ½ cups apples, peeled and finely chopped
Instructions:
Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Line a muffin pan with paper liners or grease the pan.
Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Combine Wet Ingredients: In another bowl, mix the melted butter and honey until well combined. Beat in the eggs and vanilla extract.
Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
Add Apples: Fold in the chopped apples.
Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
Bake: Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool: Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
