Right. Making pretzels. This is alarmingly easy, actually. The hard part is making them *look like pretzels.

630g flour (I used a 60/40 mix, bread flour/high gluten baker's flour)
2 tsp salt
1 tbs raw sugar
1 tsp yeast, instant
355g warm water

2/3 cup baking soda
10 cups water

1/2 stick butter, melted
sea salt

Make dough with first five ingredients. You can bloom the yeast first if you like, but I find that most modern instant yeast does not care.
Allow dough to rise 1 hour.
Preheat oven to 400ºF/205ºC for @Grumblesock, and line two sheet pans with parchment.
Bring 10 cups water to boil and add baking soda. Stir.
Punch down dough and measure out 80g pieces. Roll these out and either make sticks (like I did this time) or pretzel shapes. Whatever you want, really.
Drop raw pretzels in boiling baking soda water for 1 minute. Arrange on parchment. At this point I cut slits on mine with a sharp knife. Brush with butter and dust with sea salt.
Bake until golden brown, 8-14 minutes depending on your oven.
That's it, there you have it, you've made pretzels.
