Soda pop has been called many things in China. Back in the 1880s, the fizzy sweet stuff was known as “Dutch water” (荷兰水 helan shui). Nowadays, the kids call it "fat slacker happy water” (肥宅快乐水 feizhai kuaile shui). What happened in between—the ups and downs of Chinese soda pop during the 20th century—makes for a roller coaster of a tale.
