As a food scientist I can tell you it wouldn’t kill you. It would have bloated if there was growth. The color is probably off as the the sugar can caramelize over time and added colors fade. Most of the time the shelf date on non-perishable items (that aren’t high in fat) is there for cosmetic changes or because vitamins, decay and wouldn’t match what’s shown on the nutritional label.
And this is why food scientists never get invited to parties ☹️
