After looking up what an epigraph is (the Dutch translation, epigraaf, didn't help much), I can state I don't use those.
Depending on the story I use chapters with titles or just numbers - with or without the word 'Chapter'. There is no rhyme, reason or rule to the length. Random is the only 'R' word that fits.
The shortest chapter I ever wrote was around 70 words. The longest just under 5000.
