Lettuce reaches maturity is around 6 to 8 weeks. You can certainly eat "baby" leaves beforehand and as it grows as well.
I generally let it go to 6 weeks and either harvest in a "cut and come again" fashion - meaning I harvest the whole thing by cutting about an inch or an inch and a half above the base and let the entire plant grow again. The plant will then regrow and reach maturity in about 4 to 5 weeks (much quicker than from seed).
Or if its for my own kitchen garden, I'll "browse" on the plant and just take a leaf(s) off when I need it for a meal and let the plant continue to grow.
