Yesterday was a cleaning-all-the-things day and I had a gander at my freezer.
Today, I cleaned out anything in a “stock” context, from cooked bones & raw chicken backs & veggie trimmings, so I’m gonna make stock tonight.
Tomorrow, I’ll make something my Canadian ass has never had — red beans & rice. Got me some ham hock & andouille sausages to use in project “rescue the freezer.”
Already, I’ve portioned a bunch of bacon I got on sale this week. If I pre-cook & freeze, I eat too much, so.
