What I've found in dealing with the hoity-toity is that there's a large degree of Postel-ness around all the politeness rules. "Manners" are there for your benefit—they're more about being considerate to others rather than being annoyed at them for breaches. They're not supposed to be gotchas and traps and mines.
The salad fork is not a shibboleth, it's just there in case you'd like to use a salad fork.
